Swedish Apple Pie

2 pounds apples, peeled, cored and sliced into ½ inch slices
¼ cup sugar
1 tablespoon freshly squeezed lemon juice
2 teaspoons cinnamon
1 cup flour
¾ cup light brown sugar, packed
½ teaspoon salt
½ teaspoon baking powder
1 large egg
1 teaspoon vanilla extract
½ cup unsalted butter, softened
Directions
- Preheat oven to 350 degrees Fahrenheit. Grease 9-inch deep dish pie plate and set aside.
- In a large bowl, toss sliced apples with sugar, lemon juice, cinnamon and a pinch of salt. Transfer to pie plate.
- In a medium bowl, whisk together the flour, salt and baking powder. Set aside. Combine the butter, sugar, eggs and vanilla together in a large bowl. Mix until well combined. Fold in flour mixture with a spatula.
- Spread batter evenly over top of apples.
- Bake for 50 to 60 minutes until top is golden brown and apples are bubbling around the edges. Cool before serving.
