Apple Oatmeal Bars

APPLESIngredients
2 cups old fashioned oats
1 cup white whole wheat flour or all-purpose flour
½ teaspoon baking powder
½ teaspoon ground cinnamon
¼ teaspoon salt
½ cup honey
6 tablespoons melted butter
¼ cup unsweetened applesauce
4 medium apples, sliced thin
Topping:
½ cup chopped pecans
½ cup old fashioned oats
¼ cup brown sugar
1 teaspoon ground cinnamon
Pinch of salt
Directions
- Preheat oven to 350°F. Line 8x8 inch baking pan with parchment paper and spray with nonstick spray. Set aside.
- Peel, core and slice apples ¼ inch thin.
- In a large bowl, mix together oats, flour, baking powder, cinnamon and salt. Add honey, butter and apple sauce and mix together.
- In a medium bowl, stir together chopped pecans, oats, brown sugar, cinnamon and salt. Set aside.
- Press dough in an even layer into prepared pan. Overlap apple slices on top of dough and sprinkle on pecan topping.
- Bake in the oven for 40-45 minutes until the edges are brown. Let cool in pan and remove by picking up with edges of parchment. Let cool on cooling rack and cut in bars.
