Gluten Free Apple Crisp

APPLESIngredients
2 pounds of apples
¼ cup apple cider
2 tablespoons maple syrup
1 ½ tablespoons lemon juice
1/8 teaspoon salt
1 tablespoon unsalted butter or vegan butter, diced
Topping
¾ cup almond flour
¼ cup cassava flour or gluten-free all-purpose flour
1 ½ tablespoons tapioca flour or cornstarch
½ cup toasted pecans
1/3 cup maple sugar or coconut sugar
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
¼ teaspoon salt
4 tablespoons unsalted butter, vegan butter or coconut oil
Directions
- Preheat oven to 350° F.
- Peel and slice apples. Place in large bowl.
- Toss apples with apple cider, maple syrup, lemon juice and salt.
- Place apples in 9-inch round baking dish with 2-inch sides or 8x8 inch square pan. Dot with cubed butter.
- Bake at 350°F for 30-35 minutes. Remove from oven and gently stir.
Topping
- Place almond flour, cassava or GF flour and tapioca flour or cornstarch in a large bowl with the maple or coconut sugar, cinnamon, nutmeg and salt. Stir to combine.
- Cut butter in chunks and place with flour mixture. Cut in butter with pastry cutter or forks until mixture is crumbly.
- Chop toasted pecans and add to flour mixture.
- Crumble the topping over the baked apples and return to oven. Bake for an additional 30-35 minutes until the topping is deep golden and the apples are bubbling.
- Let cool for at least 10 minutes. Serve warm or at room temperature.
