Gluten Free Apple Crisp

2 pounds of apples
¼ cup apple cider
2 tablespoons maple syrup
1 ½ tablespoons lemon juice
1/8 teaspoon salt
1 tablespoon unsalted butter or vegan butter, diced
¾ cup almond flour
¼ cup cassava flour or gluten-free all-purpose flour
1 ½ tablespoons tapioca flour or cornstarch
½ cup toasted pecans
1/3 cup maple sugar or coconut sugar
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
¼ teaspoon salt
4 tablespoons unsalted butter, vegan butter or coconut oil


  1. Preheat oven to 350° F.
  2. Peel and slice apples.  Place in large bowl.
  3. Toss apples with apple cider, maple syrup, lemon juice and salt.
  4. Place apples in 9-inch round baking dish with 2-inch sides or 8x8 inch square pan. Dot with cubed butter.
  5. Bake at 350°F for 30-35 minutes.  Remove from oven and gently stir.


  1. Place almond flour, cassava or GF flour and tapioca flour or cornstarch in a large bowl with the maple or coconut sugar, cinnamon, nutmeg and salt.  Stir to combine.
  2. Cut butter in chunks and place with flour mixture.  Cut in butter with pastry cutter or forks until mixture is crumbly.
  3. Chop toasted pecans and add to flour mixture.
  4. Crumble the topping over the baked apples and return to oven. Bake for an additional 30-35 minutes until the topping is deep golden and the apples are bubbling.
  5. Let cool for at least 10 minutes.  Serve warm or at room temperature.
