Simple Sauteed Beets
Ingredients
8 medium beets, grated (about 4 cups)
4 tablespoons butter
2 tablespoons fresh lemon juice
ΒΌ cup water
Directions
Wash, peel, and coarsely grate beets. Melt butter in a saute pan, add beets, and stir to coat with butter. Pour in lemon juice and water. Cover and cook on medium to low for about 10 minutes. Stir and check occasionally to see that the beets don’t burn. Cook just until tender.
