Maple Walnut Mini Muffins

MAPLE SYRUPIngredients
2 ¼ cups all-purpose flour
¾ cup whole wheat flour
1 tablespoon baking powder
½ teaspoon salt
1 ½ cups pure maple syrup
12 tablespoons unsalted butter, melted
½ cup whole milk
1 large egg plus 1 large egg yolk
1 cup coarsely chopped toasted walnuts
Directions
- Preheat oven to 400°F. Spray two mini muffin pans with cooking spray.
- In large bowl, whisk together all-purpose flour, whole wheat flour, baking soda and salt. Set aside.
- In a medium bowl, whisk together the maple syrup and melted butter. Whisk in the milk, followed by the egg and egg yolk. Add to the dry ingredients and whisk until smooth. Stir in the walnuts. Let batter rest for 5 minutes.
- Use tablespoon scoop to place batter evenly into prepared pans. Bake for 5 minutes, then reduce the oven temperature to 375°F and bake for 7 more minutes or until the muffins are golden brown.
- Cool in pan for 5 minutes. Remove and place on a wire rack to cool.
