Maple Apple Cider Cupcakes

MAPLE SYRUPIngredients
1 ½ cups all-purpose flour
1 tsp baking powder
½ tsp baking soda
½ tsp salt
1 tsp cinnamon
¼ tsp nutmeg
¼ tsp allspice (optional)
½ cup unsalted local butter, softened
½ cup brown sugar
¼ cup NY maple syrup
2 large local eggs
1 tsp vanilla extract
½ cup fresh apple cider
1 cup finely diced NY apples (peeled or unpeeled)
8 oz local cream cheese, softened
½ cup unsalted butter, softened
2–3 tbsp NY maple syrup (to taste)
2 cups powdered sugar
Pinch of cinnamon (optional)
Directions
- Prepare
- Preheat oven to 350°F.
- Line a 12-cup muffin tin with cupcake liners.
- Combine Dry Ingredients
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and allspice.
- Cream Butter & Sugar
- In a large mixing bowl:
- Beat butter and brown sugar until light and fluffy (about 2–3 minutes).
- Add maple syrup and mix.
- Add eggs one at a time, mixing well between each addition.
- Stir in vanilla.
- Add Dry Ingredients + Cider
- Add half the dry ingredients to the butter mixture and gently mix.
- Add the apple cider, mixing until just combined.
- Add the remaining dry ingredients and stir gently.
- Fold in the diced apples.
- Bake
- Pour batter into cupcake liners (about ¾ full).
- Bake for 18–20 minutes, or until a toothpick comes out clean.
- Cool completely before frosting.
