Rhubarb Coffee Cake

Find Farm Fresh:



½ cup butter
1 ½ cups sugar
2 eggs
1 cup sour cream
1 teaspoon vanilla
2 cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
3 cups chopped rhubarb
½ cup packed brown sugar
¼ cup all-purpose flour
1 teaspoon cinnamon
3 tablespoons cold butter, cut into cubes


  1. Preheat oven to 350°F.
  2. Cream together butter and sugar in a mixing bowl.  Beat in eggs one at a time and stir in sour cream and vanilla.
  3. Sift together flour, baking soda and salt and fold into batter.  Stir in rhubarb and place in 9x13 inch greased pan.
  4. To make topping, mix together brown sugar, flour and cinnamon, Cut butter in with pastry blender.  Sprinkle topping over batter and bake 30 to 40 minutes.
  5. Cool on wire rack.
