Rhubarb Coffee Cake

½ cup butter
1 ½ cups sugar
2 eggs
1 cup sour cream
1 teaspoon vanilla
2 cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
3 cups chopped rhubarb
Topping:
½ cup packed brown sugar
¼ cup all-purpose flour
1 teaspoon cinnamon
3 tablespoons cold butter, cut into cubes
Directions
- Preheat oven to 350°F.
- Cream together butter and sugar in a mixing bowl. Beat in eggs one at a time and stir in sour cream and vanilla.
- Sift together flour, baking soda and salt and fold into batter. Stir in rhubarb and place in 9x13 inch greased pan.
- To make topping, mix together brown sugar, flour and cinnamon, Cut butter in with pastry blender. Sprinkle topping over batter and bake 30 to 40 minutes.
- Cool on wire rack.
