Rhubarb Strudel

½ cup unsalted butter (softened)
½ cup sugar
½ teaspoon baking powder
½ teaspoon salt
2 cups flour
2 tablespoons low-fat milk
2 eggs (1 egg, separated)
1 teaspoon vanilla
4 cups rhubarb, sliced
1 package strawberry flavored gelatin
1 ½ cups sugar
1 cup flour
½ cup unsalted butter


  1. Mix together butter and sugar until light and fluffy. 
  2. Separate 1 of the eggs and add 1 egg and 1 egg yolk to the mixture.  Mix well.
  3. Sift together the flour, baking powder and salt and add to the mixture.   Stir in milk.
  4. Press mixture into greased 9 in. X 13 in. pan.
  5. Beat egg white until frothy and spread over dough.  Spread rhubarb over dough.   Sprinkle dry gelatin on top.
  6. To make topping, mix together sugar and flour.
  7. Cut cold butter into pieces and add to mixture using a pastry cutter (the mixture will be crumbly).
  8. Sprinkle topping over dough.
