Rhubarb Strudel
Ingredients
½ cup unsalted butter (softened)
½ cup sugar
½ teaspoon baking powder
½ teaspoon salt
2 cups flour
2 tablespoons low-fat milk
2 eggs (1 egg, separated)
1 teaspoon vanilla
4 cups rhubarb, sliced
1 package strawberry flavored gelatin
Topping:
1 ½ cups sugar
1 cup flour
½ cup unsalted butter
Directions
- Mix together butter and sugar until light and fluffy.
- Separate 1 of the eggs and add 1 egg and 1 egg yolk to the mixture. Mix well.
- Sift together the flour, baking powder and salt and add to the mixture. Stir in milk.
- Press mixture into greased 9 in. X 13 in. pan.
- Beat egg white until frothy and spread over dough. Spread rhubarb over dough. Sprinkle dry gelatin on top.
- To make topping, mix together sugar and flour.
- Cut cold butter into pieces and add to mixture using a pastry cutter (the mixture will be crumbly).
- Sprinkle topping over dough.
