Pumpkin Maple Bread

½ cup unsalted butter, melted
½ cup maple syrup
1 cup pumpkin puree´
2 eggs
¼ cup milk
2 teaspoons pumpkin spice blend (1 teaspoon cinnamon, ½ teaspoon ground ginger, ¼ teaspoon ground nutmeg and ¼ teaspoon ground allspice or cloves)
1 teaspoon baking soda
1 teaspoon vanilla extract
½ teaspoon salt
2 cups white whole wheat flour (King Arthur brand)
1 Tablespoon maple sugar mixed with a pinch of ground cinnamon
Directions
- Preheat oven to 325 degrees Fahrenheit and grease 9x5 inch loaf pan.
- In a large bowl, beat the butter and maple syrup together with a whisk. Add the eggs and whisk until blended. Add the pumpkin puree, milk and vanilla and whisk to blend.
- Sift together the flour, spices, salt and baking soda. Add to pumpkin mixture and stir until just combined.
- Pour batter into greased loaf pan and sprinkle lightly with cinnamon-maple sugar.
- Bake for 55 to 60 minutes or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes. Carefully transfer bread to cooling rack and cool for 20 minutes before slicing.
