Ingredients

½ cup unsalted butter, melted
½ cup maple syrup
1 cup pumpkin puree´
2 eggs
¼ cup milk
2 teaspoons pumpkin spice blend (1 teaspoon cinnamon, ½ teaspoon ground ginger, ¼ teaspoon ground nutmeg and ¼ teaspoon ground allspice or cloves)
1 teaspoon baking soda
1 teaspoon vanilla extract
½ teaspoon salt
2 cups white whole wheat flour (King Arthur brand)
1 Tablespoon maple sugar mixed with a pinch of ground cinnamon

Directions

  1. Preheat oven to 325 degrees Fahrenheit and grease 9x5 inch loaf pan.
  2. In a large bowl, beat the butter and maple syrup together with a whisk.  Add the eggs and whisk until blended.  Add the pumpkin puree, milk and vanilla and whisk to blend.
  3. Sift together the flour, spices, salt and baking soda.  Add to pumpkin mixture and stir until just combined.
  4. Pour batter into greased loaf pan and sprinkle lightly with cinnamon-maple sugar.
  5. Bake for 55 to 60 minutes or until a toothpick inserted into the center comes out clean.
  6. Let the bread cool in the pan for 10 minutes.  Carefully transfer bread to cooling rack and cool for 20 minutes before slicing.
