Roasted Cauliflower

1 large head cauliflower
3 tablespoons olive oil
Salt and pepper
1 cup freshly grated Parmesan cheese
Directions
- Preheat oven to 350°F.
- Remove outer green leaves from the cauliflower and cut the head into florets. Discard stems.
- Place the cauliflower on a sheet pan and drizzle with olive oil. Generously sprinkle with salt and pepper and toss well.
- Bake for 30 minutes, tossing once until the cauliflower is tender and starts to brown.
- Sprinkle with parmesan cheese and bake additional 1-2 minutes until cheese melts.
- Season to taste and serve immediately.
