Twiced Baked Sweet Potatoes and Roasted Cauliflower

SWEET POTATOES

Ingredients

4 medium sweet potatoes
2 tablespoons butter, melted
1 ½ teaspoon seasoned salt
1 teaspoon chili powder
½ teaspoon smoked paprika
¼ cup grated parmesan cheese
½ cup shredded cheddar cheese
Toppings
4 slices bacon
1 avocado, cut into small pieces
4 sprigs of cilantro, chopped
2 scallions, sliced

Directions

  1. Preheat the oven to 425°F.   Prick the sweet potatoes with a fork.   Bake directly on the rack until tender, 35-40 minutes.  Slice in half and let cool.  (To decrease cooking time, instead of baking, microwave sweet potatoes on high for 5-8 minutes.)
  2. Scoop out most of the flesh.  Arrange the skins on a parchment-lined baking sheet.
  3. Mix the melted butter with the seasoned salt, chili powder and paprika. 
  4. Mash the scooped out sweet potato and mix in seasoned butter.  Spoon the mashed potatoes in the potato skins.  Sprinkle parmesan and cheddar cheese on top of potatoes and bake for 15-20 minutes.
  5. While the potatoes are baking, cook the bacon on low in a large frying pan for 10-15 minutes.  Cut up bacon in small pieces.
  6. Serve immediately with bacon bits, avocado, cilantro and scallions or your favorite toppings.
