Grilled Peaches with Whipped Cream
Ingredients
4 peaches, ripe, but firm
1 tablespoon olive oil
2 tablespoons honey
Pinch ground cinnamon
8 ounces of heavy cream
1 teaspoon vanilla extract
1 tablespoon confectioners’ sugar
Directions
For grilled peaches
- Preheat gas grill to medium-high heat on half the grill and low heat on other half.
- Cut peaches in half and remove pits.
- Brush the peach halves with olive oil.
- Place the peach halves on the grill cut side down over direct heat until they start to soften (4-5 minutes).
- Brush the peach halves tops with oil and turn over; then move to indirect heat on other side of grill and continue cooking for 4-5 minutes.
- Brush peach halves with honey and cinnamon.
Whipped Cream
- In large mixing bowl, whip cream with whisk attachment until stiff peaks are about to form.
- Beat in vanilla and sugar until peaks form.
- Top each peach half with whipped cream and drizzle with honey.
