Spring Greens with Bacon
Ingredients
4 ounces bacon, finely diced
2 tablespoons extra-virgin olive oil
1 large shallot, sliced thin
1 hot red chile, seeded and chopped
1 tablespoon mustard seeds
1 ½ pounds mixed young spring greens
Salt
Freshly ground pepper
1 tablespoon white wine vinegar
Directions
- Remove stems and inner ribs from greens and cut into ribbons.
- Cook the bacon in the olive oil in a large skillet over moderate heat, stirring until golden, about 3 minutes.
- Add the shallot, chile and mustard seeds and cook until softened for 2 to 3 minutes.
- Add the greens and toss frequently until wilted and tender for 5 to 6 minutes. Season with salt and pepper.
- Stir in vinegar.
- Remove from heat and serve.
