Spring Greens with Bacon

Find Farm Fresh:



4 ounces bacon, finely diced
2 tablespoons extra-virgin olive oil
1 large shallot, sliced thin
1 hot red chile, seeded and chopped
1 tablespoon mustard seeds
1 ½ pounds mixed young spring greens
Freshly ground pepper
1 tablespoon white wine vinegar


  1. Remove stems and inner ribs from greens and cut into ribbons.
  2. Cook the bacon in the olive oil in a large skillet over moderate heat, stirring until golden, about 3 minutes.
  3. Add the shallot, chile and mustard seeds and cook until softened for 2 to 3 minutes.
  4. Add the greens and toss frequently until wilted and tender for 5 to 6 minutes.  Season with salt and pepper.
  5. Stir in vinegar.
  6. Remove from heat and serve.
