Eat Local, Eat Healthy This Winter!

There are many ways to enjoy locally gown food this winter.  Winter leafy greens can be used in a variety of meals from main dishes to sides and snacks.  It's easy to whip together a salad using spinach or kale or toss some into a smoothie or protein shake for added fiber and nutrients.  Fresh greens including arugula, bok choi, mesclun and spinach can be tossed in a salad or used in main-course salads and one-bowl meals.

Potatoes, onions, carrots and parsnips provide a hearty texture and lots of nutrients when added to broth based or cream-based soups.  Winter vegetables are wonderful to roast to enjoy on their own or include in soups and salads.   Apples are a great snack and even better when paired with a healthy nut butter to provide you with a nutritious snack packed with healthy carbs, fiber, fat and protein.

Winter squash can be used in a variety of ways and in many different recipes.  Add it to soups, stews and one-pot dishes for comforting cold-weather meals.  Be adventurous and try some veggies that may not be part of your current diet.  Winter vegetables like parsnips, celeriac, turnips and rutabagas can be roasted or sautéed and added to soups and stews.  It's a great opportunity to eat healthier and enjoy locally grown food!
